Divorced Dinners: Creamy lamb and pea curry

No claims for authenticity but this makes a tasty meal.  This My recipe can easily be doubled to share with that special person you met on the best dating site in the world.

1 lamb leg steak
Groundnut oil
½ medium onion sliced
1 large clove of garlic finely chopped
1 inch cube of fresh ginger finely chopped
1 dessertspoon mild curry paste
1 sachet creamed coconut or about ¼ of a block
Half a cup of fresh or frozen peas
Sea salt and freshly ground black pepper 

Cut the lamb into 1inch cubes and brown on all sides in a little oil. Remove and cook the onions until just taking some colour then remove and put with the lamb.

Add the finely chopped garlic and ginger to the pan and fry until the aroma is released. Add the curry paste and crumble in the coconut adding enough water to make a not too thick sauce.

Return the meat and onions to the sauce and cook gently for about 40 minutes until the lamb is tender. Season to taste.

Add the peas and cook for a few more minutes.

Variation: Substitute chicken breast or thighs for the lamb.
