A delicious and filling supper dish for the newly divorced man or woman. Slightly sophisticated but not too posh and easy enough for the most inexperienced cook to pull off in less than 20 minutes.
Bacon and spinach with soft boiled eggs
Large clove of garlic crushed and finely chopped
½ small onion finely chopped
3 rashers streaky bacon cut into small pieces
3/4 good handfuls of spinach
2 free range eggs
Freshly ground black pepper
Warm the olive oil gently in a deep frying or sauté pan and add the garlic. As soon as the garlic starts to sizzle put in the onion and turn the heat up slightly. Once it is translucent and somewhat softened put in the bacon pieces and allow to colour.
At the same time put the eggs in a small saucepan and cover with cold water. Bring to the boil and cook for just three minutes. Run the eggs under the cold tap to cool them and shell carefully as the yolks will still be soft. Put to one side.
Once the bacon is looking nicely frizzled throw in the spinach and cover the pan with a lid if it has one or with a piece of foil if it doesn’t. The spinach will wilt quickly in the heat of the pan in less than a minute.
Take the cover off and stir around with a wooden fork raising the heat to get rid of any excess moisture lurking at the bottom of the pan. Season with freshly ground black pepper but go easy on the salt as the bacon will already have contributed some to the dish.
Turn the whole lot onto a heated plate and serve with the soft boiled eggs cut in half on top. Have some fresh crusty bread on the side to mop up the juices.
